Smoky Chorizo and Potatoes Skillet
Salt and pepper, to taste
cup cilantro, washed and chopped
In a large skillet, heat oil over medium heat.
Cook chorizo until fully cooked, breaking it apart with spoon as it cooks.
Remove from skillet and drain on a paper towel.
Return pan to heat, wipe clean and add additional tablespoon of oil. Sauté onion, bell pepper, tomato, and garlic, about 4-6 minutes.
Season with salt and pepper, add potatoes and fry until potatoes are golden, lightly crisped and cooked, about 8 minutes.
Reduce heat, add chorizo back to the skillet, stir to combine and serve warm garnished with cilantro.
- Swap out - replace chorizo with bacon or spice it up with 1 small, sliced jalapeno.
