Antipasto Chopped Salad
bag (10 oz) chopped Romaine lettuce
can (6 oz) chopped artichoke hearts (reserve 1/4 cup marinade for dressing)
cup chopped red roasted peppers
cup chopped olives (from a can)
cup grated Parmesan cheese
tablespoon dried oregano
teaspoon crushed red pepper flakes
Toss all of the ingredients in a large bowl. Add 1/4 cup of the reserved marinade from the artichokes and toss to coat.
Salad Bar Option: Toss together everything but the salami, red peppers, olives, and artichokes. Place these items in small bowls and let people add the items they want to their own individual salads.
