Greek Chick Pea and Cucumber Salad

can (15 oz) Progresso™ chick peas (garbanzo beans), drained, rinsed

plum (Roma) tomatoes, chopped

jar (7.5 oz) roasted red or yellow bell peppers, drained, sliced

1/2

small white onion, quartered, thinly sliced

1

medium cucumber, chopped (1 cup)

tablespoons chopped fresh cilantro

tablespoons lemon juice

teaspoons olive oil

1/2

cup crumbled queso fresco cheese (2 oz)

    In large bowl, mix chick peas, tomatoes, bell peppers, onion, cucumber, cilantro and garlic.

    In small bowl, mix lemon juice, oil and salt until blended. Add to tomato mixture; toss to coat. Let stand 15 minutes to blend flavors. Just before serving, sprinkle with cheese.
